Perfect Poached Eggs Salad


1 Fresh Egg

1 Cup Spring Mix

1 Cup Arugula

1/2 Tbsp Olive Oil

2 Tbsp Chopped Pecans

1/2 Avocado

How To:

1. Bring a pot with about 1 inch of water to a simmer (not boiling) 2. Crack an egg into a little ramekin. Take a spoon and stir the simmering water in circles creating a whirlpool effect. 3. Drop the ramekin into the middle of the whirlpool and the egg will float out and the whites will spin around the yolk 4. Let the egg poach for about 4 minutes 5. While your egg is poaching, take spring mix and arugula and toss in about 1/2 tbsp of olive oil.

6. Add chopped pecans and diced avocado to salad. Lay your poached egg on top and enjoy!
